Gluten Free Banana Bread
- ½ cup almond flour
- ½ cup coconut flour
- 1¼ teaspoon baking soda
- 1 tablespoon tapioca starch
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- 2 tablespoons coconut oil plus more for greasing your pan
- 4 ripe bananas
- 4 eggs
- Cacao nibs or favorite nuts (use amount desired)
1.) Preheat the oven to 350° Lightly oil a 9×5” loaf pan using coconut oil.
2.) Whisk together the dry ingredients in a mixing bowl.
3.) In a separate bowl, blend the bananas, vanilla, and coconut oil. Once fully combined, stir in the eggs until well mixed.
4.) Next, fold the dry ingredients to the wet, stirring until a consistent batter forms. Fold in any optional additions if desired.
5.) Place the batter into the loaf pan and bake for approximately 40-45 minutes or until golden on top. Make sure bread is fully cooked by using a toothpick. If toothpick comes out clean after inserting into center of bread, you’ll know it is finished cooking.
6.) Let cool before slicing and serving.
Gluten Free Banana Bread taste so good for breakfast, a snack, or a little dessert. I’m not sure if this banana bread or our Paleo Apple Cinnamon Muffin Recipe is our kids favorite, but either one we make, it sure disappears quickly.
I love that this recipe is healthy and gluten free. It goes to show you don’t have to sacrifice your favorite goodies, you can just adjust the ingredients.
